Muffins don’t have to be unhealthy and fattening. I love this recipe in the morning with coffee, it makes it breakfast fun and satisfying, setting my mood for the entire day. When you make this recipe, remember that your oven may bake differently than mine, so it may take a few attempts before your muffins come out perfectly. But, even if they don’t come out in a perfect shape, they will still be delicious! Here is the recipe:

What you need:

  • 4 tbsp flax meal
  • 1/2 cup coconut flour + 2 tbsp
  • 1/2 cup unflavored protein powder
  • 1/2 cup almond flour
  • 1/2 cup grated zucchini
  • 1/2 cup almond milk
  • 1/4 cup coconut milk
  • 1/2 cup club soda
  • 1/3 cup stevia
  • 1.5 tsp baking powder

What you do:

  1. Preheat oven at 375 degrees.
  2. Mix flax meal and 2 tbsp coconut flour and sprinkle inside non-stick muffin trays
  3. Mix all of the ingredients together and fill muffin cups 2/3 of the way. Bake 20-25 mins. Until you can stick a fork in them and it comes out clean. ENJOY!
