Healthy Recipes: Cauliflower Popcorn

Pumpkin seeds, have been our favorite movie theater snack, but it’s been too long and we were desperately trying to find a replacement for it. After a few failed attempts, one of our clients told us that it is possible to make fake (and healthy) popcorn, out of cauliflower. After greedily questioning her for about 30 minutes, we were finally ready to make our cinema dream snack a reality! Here is how to make it:

What you need:

  • 1 pound fresh cauliflower
  • 2 tablespoons oil
  • 4 teaspoons Mrs. Dash Table Blend seasoning
  • Salt, to taste
  • Squirt of liquid Stevia, to taste, optional

What you do:

  1. Cut the cauliflower into bite-size pieces
  2. Put in a large plastic storage bag or a large mixing bowl
  3. Drizzle the oil over the cauliflower then sprinkle with Mrs. Dash and a little salt
  4. Close bag and shake until florets are coated as evenly as possible or toss well in bowl
  5. Spread in a single layer on a baking sheet (best if lined with nonstick foil)
  6. Bake at 400º 50-60 minutes, turning them over every 15 minutes
  7. Bake until very dark brown, but not completely burnt
  8. Taste and sprinkle with more salt, if needed, and a very light dusting of liquid Stevia, if desired. The Stevia helps cut the bitterness of the charred cauliflower
